Vatika offers groundbreaking cuisine to Southampton’s locals – and a few who have travelled from further away, just to sample this tribute to decadence and gastronomy. To create their innovative and exciting dishes, Vatika’s chefs use only local and organic produce wherever possible. This restaurant’s aim is to try out daring flavour-combinations, using British goods with Indian spices. The menu is a delight, featuring dishes such as tandoor-cooked pigeon with vanilla-infused beet, Goan-spiced lobster tail and sea bass with three peppers and coconut butter. Leave room for dessert or you’ll miss out on dishes such as the carrot pudding with pistachio ice-cream and grilled sultanas.
