The Georigan way of making and enjoying food is presented in every manner possible depending on the time of day. De Da means mother in Georgian, both literally and in the metaphoric sense - nurturing, the motherland etc. Despite being stuck between Persian, Slavic, Asian and Mediterranean influences, Georgian cuisine has its own distinctive tastes and dishes. For special occasions, meat is always very important, it is marinated, cooked till it is tender or grilled over a fire of vine wood. There are always fresh vegetables, fruit and herbs to go with most dishes. The restaurant mirrors establishments in the Georgian capital of Tbilissi with vines and water features bringing nature to the city.
